Three ways to hatch healthy meals from Easter eggs
Very soon, the Easter bunny will be visiting homes around mid-Missouri. That means many of you will soon have a couple dozen hardboiled eggs in your refrigerator.
But what to do with them once the egg hunt ends? Here are a few ideas to turn those colorful eggs into easy meals for any time of day:
- Breakfast: Two hardboiled eggs are an easy grab-and-go breakfast when combined with a piece of fruit. As an idea, strawberries are in season around Easter and are easy to portion out into containers ahead of time. If you are a hearty breakfast eater, add an ounce of nuts as well.
- Lunch: Hardboiled eggs are a great way to add a complete protein to your kid’s lunch. The fact that they are colorfully dyed this time of year makes them an extra kid-friendly lunch bag addition! Combo it with ants on a log or baby carrots and veggie dip along with a piece of fruit and you have a complete meal.
- Dinner: Cobb salads are a classic American dish that are easy to make outside the restaurant. Just slice 1-2 eggs, some of the lunch meat (or Easter ham) you have on hand and any extra veggies you have from your fridge. Toss onto a bed of your favorite salad greens and you’re good to go. This can be a great way to use up all your holiday leftovers: hardboiled eggs, ham, radishes, cucumbers, tomatoes, peppers and carrots.
